Have you ever tried Good Batch Mama Teriyaki Chicken? This versatile dish is a great option for a last-minute dinner. It bakes quickly, and you can easily incorporate whatever vegetables you have on hand to create a stir-fry-style meal in minutes. I usually chop up zucchini, squash, onion, mushrooms, and peppers to serve with rice and Teriyaki Chicken. However, this week I decided to try something completely new, and it was a huge hit!

Sweet Chili Teriyaki Bowls are incredibly easy to make. By using GBM Teriyaki Chicken, a pre-made sweet chili sauce from the Asian section of Walmart (I chose the P.F. Chang's brand), and a few tasty toppings, you can prepare a healthy and filling meal in no time.

Prep Time: 10 minutes    Total Time: 50 minutes    Servings: 4-5 bowls  


Ingredients

  • 1 Regular order of GBM Teriyaki Chicken
  • 2.5 C of quality White Rice
  • 5 C of Chicken Broth
  • 1 bottle of Sweet Chili Sauce (you can also use a sesame ginger dressing)
  • 1 bag of Shredded Coleslaw Mix
  • 1 bundle of Green Onions
  • 3 ripe Avocados
  • Sesame Seeds

Instructions

1. Begin by baking your teriyaki chicken according to the instructions on the bag. 
2. Steam your rice in the oven, following the directions in this article - trust me, this method works best. 
3. Once the chicken is cooked to the proper temperature, cut it int bite-sized pieces and let it soak in the sauce. 
4. Wash and chop your green onions and place them in a separate bowl .
5. In the same bowl, add the bag of coleslaw mix and stir thoroughly. 
6. Add half of the bottle of dressing to the coleslaw mix and stir again. 
7. For the avocados, cut them in half, remove the pit, slice them with a knife, and scoop out the flesh with a spoon. (Try to do this as close to serving time as possible, as avocados will brown over time.)
8. Once the rice is done, the chicken is cooked, and the slaw is assembled, you are ready to serve your bowl. Start with a layer of rice, then spoon in the teriyaki chicken and drizzle extra sauce over it. 
9. Top the rice and chicken with the slaw and avocado slices. 
10. Drizzle some of the remaining sweet chili sauce over everything, them sprinkle with sesame seeds. 

You are now ready to enjoy your very own teriyaki bowl! As with any recipe, there are many ways to customize it to your liking. Consider adding fresh bean sprouts, steamed broccoli, or shelled edamame as a few options!
